Within the finest wine producing area in Burgundy, between Dijon and Beaune, stands the majestic Château de Gilly, a former medieval residence of the Cistercian monks. Today, it is an exclusive hotel overlooking the River Vouge and steeped in history, with magnificent architectural features, a gourmet restaurant and beautiful parkland grounds, complete with a moat.
The rooms and suites at Château de Gilly are elaborately decorated and have wonderful garden views. Superb wood panelling, a stone fireplace and exquisite wall coverings are just some of the suites’ inviting features. Be sure to dine in Le Clos Prieur restaurant, in the original 14th-century wine cellar with its impressive vaulted ceilings supported by slender stone pillars.

Services
Château de Gilly includes several historic buildings displaying centuries of superb craftsmanship. One such is the stone-vaulted cellar, now the restaurant, which is linked by tunnel to the main building. The cuisine and the wines are a gastronomic experience never to be forgotten - a worthy tribute to Burgundian culture.

This superb rib-vaulted room supported by slender pillars was originally the cellar for the Cistercian monks of Gilly. Here they kept casks and barrels filled with wine from the Clos de Vougeot vines.
In such a setting full of character, the cuisine has to be flavoursome and sophisticated, accompanied by an excellent wine menu. No less than 15,000 bottles and 600 types of wine are aged in the Château's cellars.

Le Clos Prieur
For Jean-Alain Poitevin, cooking is a true vocation. He learnt his skills in Burgundy, at "Lameloise" in Chagney which allowed him to appreciate the region's riches and uncover the secret of the famous jambon persillé (Jellied ham with parsley). He then discovered the great champagnes when he joined Gérard Boyer's team at Crayeres in Reims. But he rediscovered Burgundy with delight, firstly at the Château de Chailly as sous-chef, then after being promoted to Chef, spent 9 years at the Hôtel de la Poste in Saulieu before his arrival at the Château de Gilly in January 2006.
Jean-Alain Poitevin gets his ingredients from local producers selected for their quality, especially with certain products such as snails, foie gras, Charolais beef.
