Having perfected your putt on Domaine de Manville’s 18-hole golf course - the first in France’s PACA region to hold an ECOCERT ‘sustainable development’ certification - and appreciated its scenic views, then sit by the pool with the scent of pine in the air and the soporific buzz of the cicadas in the trees. Visit the nearby village of Les Baux with its castle ruins and discover more amazing vistas. Be sure to pick up gifts of almond-flavoured calissons, candied fruits and honey nougat from the quaint boutiques throughout the village before returning for a massage in the spa.

Environmentally Conscious

Domaine de Manville has established a permaculture farm in collaboration with PERMALAB, under the control of the DREAL and the Regional Natural Park of the Alpilles. The 2-hectare project will enable the hotel to be self-sufficient in certain varieties of vegetables, plants and herbs. The hotel has also introduced ‘green ambassador’ and ‘Zero waste tomorrow?’ programmes to develop its own in-house waste sorting and recycling system, initially focusing on culinary waste to produce compost to nourish the permaculture farm.

Cultural Custodians

Originally a working farm and home to the Saut family’s bee-keeping grandfather, Domaine de Manville protects every inch of its agricultural, historical, and natural park heritage. Working closely with ECOMED naturalists and a bird protection league, the Domaine has drawn up a precise inventory of the surrounding flora and fauna to preserve. Endemic species such as the oscelate lizard and the pelobat toad are protected, in addition to installing ten nesting boxes for the 16 different species of bats in the Natural Park.

Community Minded

Tables at the estate’s gourmet restaurant are laden with fresh ingredients from local suppliers, who are highlighted on the menu and invited to present their produce at culinary events organised by the Domaine. Cooking classes with vegetables from the garden and agro-forestry farm tours are open to guests and members of the local community including school children, where they can learn about composting and honey production. A green walk is also organised bi-monthly to clear the grounds of waste and recycle it.

The orchards and the vegetable gardens locally raised lamb traditional artichokes a la barigoule slowly roasted tomatoes apricots paired with rosemary honey sun gorged strawberries from Carpentras. Our Chef draws inspiration from his immediate surroundings from the terroir around him from the beautiful market in Cavaillon.
