Al Trapo Restaurant

Chef Paco Morales, in his role as culinary advisor for the restaurant, has incorporates his concept of "informal haute cuisine" to the menu, that presents dishes created with the technical exactitude of haute cuisine, combined with a non-judgemental setting, in harmony with the restaurant space, all of which comes at reasonable prices. It is an alluring and pleasant menu, broken down in to various "sensations or stations", which leaves the guest the freedom to select, combine or share dishes, ways of eating and flavours. Paco Morales’s menu created for Al Trapo, "comprises a bit of everything, some classics from my own kitchen, some that are more modern than others, and others that are not", it also very much focuses on seasonal products at their best price, with the potential of changing dishes every ten to fifteen days. Al Trapo’s Menu features eight different stations to stop at, flick through, and come back. Starting with the first "To Eat with Your Hands and Lick Your Fingers", followed by "Gentle and Classy", "Roguish and Zingy", "Meseta and Sea", "From Just Around the Corner", or "So Far and Yet So Near", each of which includes between four and six dishes. "Cheeses From Far and Near” and "Sweets" round off the options at Al Trapo. A cuisine steeped in tradition, but with hints of modernity. On top of this, everything to do with the Iberian pig will play a key role (jowls, ears, snouts) and cold meats will be served in front of the guest from a trolley that will move around the room. Everything at Al Trapo is intended to seduce and draw the guest in: "we want them to enjoy the fantastic space we have, for them to feel charmed by our waiting staff, by our unassuming wines and by the way we see cuisine with traditional and yet modern touches, which we attempt to meld together in an established, elegant and all embracing way –points out Paco Morales-. That they feel comfortable in a space, where they are always going to be taken care of extremely well, where the client is the focal point and in which we will attempt to make sure that the food is an added bonus on top of that... All of the ingredients are there to create a highly appealing concept, which will make you want to come back once a week. Or once a month. A truly inviting option”.
