Being ¼ Danish I have always wanted to visit Copenhagen.
We only had 48 hours, but as the city is not so large, and thanks to the help of Nimb’s concierge, we were able to make the most of our time. Getting to Nimb couldn’t be easier: trains leave to Copenhagen from the airport every 15 minutes and Nimb is located just across the street from the main station. I’m not exaggerating when I say you can go from the plane to your suite in 45 minutes.
After checking into our suite we freshened up and went about exploring the city by boat with a canal tour. The concierge was able to show us the way and provided us with information about tickets and departure times. This was followed by lunch at a nearby café, shopping and then some rest back at the hotel. While my wife was getting ready for the evening, I did what I normally do at this hour: grab my book and head for the lounge. Everything about Nimb’s lounge – layout, décor, artwork, background music and cocktail menu - is original and a delight for the senses. I parked myself in one of the high back lounge chairs in front of the crackling oversized fireplace and ordered a cocktail from a list of drinks I have never heard of anywhere else (I took something made of gin, egg and cucumber – delicious). When my wife was ready, we made our way to the restaurant. Nimb’s restaurant Terrace is situated within Tivoli Gardens, just a short walk from the hotel. Set amidst the Gardens, Terrace faintly reminded me of Tavern on the Green, in Central Park in New York City; but at Terrace the atmosphere is more intimate and sophisticated and the food is better. If I’m being completely honest, we were a bit disappointed as we were making our way to Terrace because we had our hearts set on eating at the Michelin-starred Herman; however we forgot all about Herman after our first course of expertly prepared scallops. Since Tivoli Gardens stays open until midnight we had enough time after dinner to ride the Dragon Coaster, hire a boat to go around the lake, and to try to win some prizes at the game booths.
Nimb has one the most extensive breakfast buffets I have ever seen; and quantity does not mean that quality is sacrificed. If you can imagine, there are at least 5 rows of buffet stations, each with a different theme: fresh baked breads and pastries, hot waffles and pancakes, eggs prepared in a variety of ways, an assortments of juices, etc. One of the more memorable items for me that morning was Nimb’s chocolate milk, which uses milk from a local dairy combined with a secret recipe from the head chef (I’m pretty sure I could detect a hint of chili). After breakfast we made our way to the reception hall where 2 bicycles were waiting for us. The night before the concierge had arranged for the bicycles to be brought to the hotel to save of us the time and trouble of having to find a place to hire them ourselves. After the concierge gave us a map of the city and deposited an umbrella and bottled water in each of our baskets (just in case) we were off for the day.
